Candy Cane Ice Cream

Every winter, I make a sort-of-homemade candy cane ice cream that my kids love. It’s just vanilla ice cream with mint extract and broken-up candy canes. What could be easier than that—or more fitting for a holiday treat?
1 Double the minty flavor: candy canes and extract.
2 Put the candy canes into a zip-top bag. My daughter, V, was on hand to help.
3 She started by pounding the bag with her fist to break up the candy canes. Ouch! Not the ideal technique.
4 Breaking them up was a little more effective.
5 Banging and rolling with a rolling pin proved to be the best method. Noisy, though!
6 We thought these bits looked good. (A few pieces were too big and had to be eaten immediately.)
7 Ready to be mixed in.
8 Use a mixer to combine the ingredients—ice cream is too stiff to mix by hand, and you don't want to let it melt.
9 Add the candy canes...
10 ...and mint extract to taste. We used a little less than teaspoon for one and a half quarts of ice cream.
11 The finished ice cream is so pretty—pale pink with swirls.
12 Place scoops between chocolate wafer cookies for sweet sandwiches.
